Roots are crisp and firm and are best when harvested young, 3 to 4" in diameter. Perfect for soups, salads, or stir-fry. Also good for pickling. It is a popular traditional Japanese variety prized for its smooth, white, globe-shaped roots and mildly-flavored leafy greens. Thrives in hot, dry weather. Grown commercially for greens.
