Excellent in soups, stews, rice dishes, and traditional desserts like red bean paste, as well as in many Asian dishes, especially in Japan, China, and Korea. The young green beans can be cooked like green beans or sprouted like mung beans. It has high levels of protein, fiber, iron, and magnesium. Does well even in adverse weather.
