This popular Cayenne variety is valued by hot-sauce makers and growers in curly-top-prone areas for its combination of yield, heat, fruit size, and disease resistance. Peppers are hot and turn from green to red when mature. The plant has green stems, green leaves, and white flowers. Great for drying into cayenne powder, fresh use, and especially for fermented mash used in Louisiana-style hot sauces. Developed and released by New Mexico State University in 1990. It was bred from a cross of Large Red Thick Cayenne Pepper and the hybrid Mesilla Cayenne Pepper. The goal was to combine those traits into a high-yielding, early-maturing open-pollinated variety.
