It is used like carrots and cooked in soups, stews, or steamed with butter and seasonings. Perfect boiled, fried, or sauteed in butter. Roots may be harvested in the fall or left in the ground until the next spring, by which time their flavor will have improved. Stores well. An excellent choice for home gardens. Parsnips originated from Europe. They are a member of the carrot family and grow similarly to carrots. Parsnips are one of the hardest-to-grow root vegetables, but are worth the trouble because of their flavor and storage capability. Plant seeds directly in the garden where the soil is finely tilled. Planting should be done immediately after the last frost. Parsnips can not take the mid-summer climate, so plant the seeds in early spring or in the fall. Roots will grow 18" to 36". The deeper the soil is tilled, the longer the roots will develop. Plants grow 6 - 12" tall.
Requires fertile, slightly acid soil in a well drained location in the garden. Apply mulch, grass clippings, or straw around the base of the plant. Work the soil to a depth of 1 to 1 ½ feet so the soil is loose. Use plenty of manure and compost for large roots.
Water only during dry and hot spells.
Use Slow Release (6 Month) Fertilizer when transplanting outdoors. Apply Miracle-Gro Liquid Fertilizer periodically.
Dig parsnips in late September.
