This variety addresses complaints that commercial Big Jim had drifted in flavor and consistency over decades, restoring more of the classic New Mexico character while improving performance. The plant yields 10% more peppers than the old Big Jim variety and contains 5 times as many flavor compounds. It is a rehabilitated version of the original NuMex Big Jim, released in 1975.
