Rhus coriaria. Annual. Sumac is used to add a "tangy" flavor to dishes. Most serious cooks would agree that there really is no substitute. Sumac is a very popular condiment in India, Indonesia, Turkey and Iran, where the ground fruits are liberally sprinkled over rice. The berries are dried and ground into powder.
