72 days. Cynara cardunculus. Perennial. Open Pollinated. Plant produces good yields of 8" tall stalks of cardoon. It is closely related to globe artichoke and comes from the Mediterranean region. The leaf stalks and ribs of cardoon have a similar flavor to artichoke when boiled. Excellent in salads, soups, and stews. Excellent choice for home gardens and market growers.
